Originally, it was considered a classic „Cucina Povera“, the cuisine of the poor, created for days when the pantry was almost empty. With nothing but pasta, high-quality olive oil, hot peperoncino and aromatic garlic, the people of southern Italy created a meal that still impresses today with its masterful simplicity. This simplicity is deeply rooted in the Italian tradition and an admirable pragmatism. The dish also became known as „spaghetti di mezzanotte“, the midnight pasta that was conjured up late at night for spontaneous guests - quickly prepared, inexpensive, but never unkind in taste.

Which olive oil is the right one?

Extra virgin olive oil with a fruity note is ideal. It doesn't have to be a super-expensive oil, but quality counts - because the oil is not just the carrier, but the main protagonist. A bitter, old or inferior oil will ruin the dish immediately. Go for freshness and origin.
